Here's a simple recipe for Mangalorean Chicken Sukka:
Ingredients:
- 500 grams chicken, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 2 tablespoons Mangalorean masala powder (Chicken sukka)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon tamarind pulp
- Fresh curry leaves
- 1/2 grated coconut
- Salt to taste
- Oil for cooking
Instructions:
1. Heat oil in a pan and add the chopped onions. Sauté until golden brown.
2. Add the ginger-garlic paste and sauté for a minute.
3. Add the tomato puree and cook until the oil separates.
4. Add the Mangalorean chicken sukka masala powder and sauté for a minute.
5. Add the chicken pieces and mix well to coat them with the masala.
6. Cook the chicken until it is almost done.
7. Add the tamarind pulp, curry leaves, grated coconut and salt. Mix well.
8. Cover the pan and cook for another 5-7 minutes until the chicken is cooked through and the flavours are well blended.
9. Serve hot with steamed rice or roti.
