MUMBAI SPECIAL VADA PAV

Vada pav is a speciality street food from the state of Maharashtra in India, especially popular in Mumbai! It's a delicious vegetarian snack made of a deep-fried potato fritter (vada) served in a soft bread roll (pav). It's often accompanied by chutneys and spicy condiments. Ingredients:

For the vada:

- 4 medium-sized potatoes, boiled and mashed

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon chilli powder

- A handful of curry leaves

-Green chillies, finely chopped

- 1-inch piece of ginger, grated

- Salt to taste

- Oil for frying


For the pav:

- 4 pav buns

- Butter for toasting


For the chutneys:

- Green chutney (made from coriander leaves, mint leaves, chillies, ginger, and lemon juice)

- Garlic chutney (made from roasted garlic, red chilli powder, and salt)


Instructions

Here's how you can prepare Mumbai-style vada pav:


1. Heat some oil in a pan and add the mustard seeds. Once they crackle, add the cumin seeds, curry leaves,  chillies, and grated ginger. Sauté for a minute.


2. Add the turmeric powder chili powder, and salt. Mix well.


3. Add the mashed potatoes and mix everything until well combined. Cook for a few minutes, then remove from heat and let it cool.


4. Divide the potato mixture into small balls and shape them into patties.


5. Heat oil in a deep pan for frying. Once the oil is hot, carefully drop the potato patties into the oil and fry them until golden brown and crispy. Remove them from the oil and drain on a paper towel.


6. Cut the pav buns in half and toast them with a little butter on a hot griddle or pan until they are lightly browned.


7. Spread some green chutney on one side of the pav and garlic chutney on the other side.


8. Place a vada in between the pav and press gently to assemble the vada pav.
