MYSORE STYLE MASALA DOSA

 Oh, Mysore-style masala dosa is a classic South Indian dish! It's a crispy dosa filled with a spicy and flavorful potato masala. Here's how you can make it:




Ingredients:-

 For the dosa batter:

  - 2 cups rice

  - 1/2 cup urad dal (split black gram)

  - 1/2 teaspoon fenugreek seeds

  - Salt to taste


For the potato masala:

  - 4 medium-sized potatoes, boiled and mashed

  - 1 onion, finely chopped

  - 2 green chillies, chopped

  - 1/2 teaspoon mustard seeds

  - 1/2 teaspoon cumin seeds

  - A pinch of asafoetida (hing)

  - 1/2 teaspoon turmeric powder

  - Salt to taste

  - 2 tablespoons oil

  - Fresh coriander leaves for garnish


Instructions:

1. Soak the rice, urad dal, and fenugreek seeds in water for about 4-6 hours. Then, grind them together to make a smooth batter. Add salt and let it ferment overnight or for at least 8 hours.


2. For the potato masala, heat oil in a pan and add mustard seeds. Once they start spluttering, add cumin seeds and asafoetida. Then, add chopped onion and green chillies. Sauté until the onion turns translucent.


3. Add turmeric powder and salt. Mix well and add the mashed potatoes. Mix everything and cook for a few minutes. Garnish with fresh coriander leaves.


4. Heat a dosa tawa or a non-stick pan. Pour a ladleful of dosa batter and spread it in a circular motion to make a thin dosa. Drizzle some oil around the edges.


5. Once the dosa turns golden brown and crispy, spread a generous amount of the potato masala on one side of the dosa.


6. Fold the dosa in half and serve hot with coconut chutney and sambar.
