Ingredients:

- For the dough:

  - 2 cups all-purpose flour

  - 1/2 teaspoon salt

  - 1/4 cup oil

  - Water, as needed


- For the filling:

  - 2 medium-sized potatoes, boiled and mashed

  - 1/2 cup peas, boiled

  - 1 small onion, finely chopped

  - 2 green chilies, finely chopped

  - 1 teaspoon ginger-garlic paste

  - 1/2 teaspoon cumin seeds

  - 1/2 teaspoon coriander powder

  - 1/2 teaspoon garam masala

  - 1/2 teaspoon red chili powder

  - Salt to taste

  - Oil for frying


Instructions:

1. In a mixing bowl, combine the all-purpose flour, salt, and oil. Mix well.

2. Gradually add water and knead the dough until it becomes smooth and firm. Cover and let it rest for 20 minutes.

3. In a pan, heat oil and add cumin seeds. Let them splutter.

4. Add the chopped onions and green chilies. Sauté until the onions turn golden brown.

5. Add ginger-garlic paste and sauté for a minute.

6. Add the mashed potatoes, boiled peas, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for a few minutes. Remove from heat and let the filling cool.

7. Divide the dough into small lemon-sized balls and roll each ball into a thin circle.

8. Cut the circle in half. Take one half and fold it into a cone shape, sealing the edges with water.

9. Fill the cone with the potato-pea mixture, around 2 tablespoons.

10. Apply water on the open edges and seal the samosa.

11. Repeat the process for the remaining dough and filling.

12. Heat oil in a deep pan for frying. Once the oil is hot, gently slide in the samosas and fry until golden brown and crispy.

13. Remove the samosas from the oil and place them on a paper towel to absorb excess oil.

14. Serve hot with mint chutney or tamarind chutney.
