CHICKEN BIRYANI
Chicken biryani is a flavorful and aromatic rice dish made with chicken, basmati rice, and a blend of spices. It's a popular dish in Indian cuisine, known for its rich flavours and fragrant aroma. The chicken is marinated in spices, cooked with rice, and layered to create a delicious one-pot meal. It's a must-try if you love Indian food! ๐๐
Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons biryani masala
- 1 tablespoon ginger-garlic paste
- 1/2 cup plain yogurt
- Handful of mint leaves
- Handful of coriander leaves
- Salt to taste
- Ghee or oil for cooking
Instructions:
1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. Heat ghee or oil in a large pot and add the sliced onions. Cook until golden brown.
3. Add the ginger-garlic paste and cook for a minute until fragrant.
4. Add the chicken pieces and cook until they are browned on all sides.
5. Add the chopped tomatoes, biryani masala, and salt. Cook for a few minutes until the tomatoes soften.
6. Stir in the yoghurt and cook for another 2-3 minutes.
7. Add the soaked and drained rice to the pot. Gently mix it with the chicken and spices.
8. Pour enough water into the pot to cover the rice by about an inch.
9. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is cooked and the chicken is tender.
10. Once the biryani is cooked, remove it from the heat and let it rest for 5 minutes.
11. Garnish with fresh mint and coriander leaves before serving.
