CHRISTMAS PLUM CAKE

 It's Christmas season lets prepare some delicious Plum cakes!



Ingredients:

- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 1/4 teaspoon ground cloves

- 1/4 teaspoon salt

- 1/2 cup unsalted butter, softened

- 1/2 cup granulated sugar

- 2 large eggs

- 1/2 cup milk

- 1 teaspoon vanilla extract

- 1 cup chopped mixed dried fruits (plums, raisins, dates, etc.)

- 1/2 cup chopped nuts (optional)

- 1/4 cup rum or orange juice (for soaking the dried fruits)


Instructions:

1. Preheat your oven to 350°F (175°C). Grease a round cake pan and line it with parchment paper.

2. In a bowl, mix the chopped dried fruits with rum or orange juice. Let them soak for about 30 minutes.

3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.

4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

5. Beat in the eggs, one at a time, followed by the vanilla extract.

6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

7. Fold in the soaked dried fruits and chopped nuts (if using).

8. Pour the batter into the prepared cake pan and smooth the top with a spatula.

9. Bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.

10. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
